a very vegan day...

BUT, NOT a "good" vegan day!
i had saltines and a soda! eh!
not AWFUL! but not GREAT!
i'm on the up slope! =-)
i am WONDERING if i have celiac disease. NO ONE has ever been able to "diagnose" what ever it is that i have...you should hear the things they have WONDERED that i have had! but NO conclusive results!
i have put MYSELF on a restrictive diet because certain things make me feel better but NEVER have i felt 100%!!!
i was reading about celiac disease earlier and i am SOOOOO going on the "diet" to see if i get better!
help me lord!....find what is wrong with me....for i have so much more to do for you! =-)

off the wagon...

for a few days now! last saturday we had a birthday party with pizza and cake, sunday was valentines day with yummee filet mignon, lobster spring rolls and duck egg rolls, and cheesecake.
it was all so yummee!
yesterday, i did vegan but this morning i had J in the B! a weakness of mine! mozarella and chicken strips! =-D
anyway, back to it from here on out! my body can only handle so much, then i start getting nauteous all the time!

RAWKIN RAW "meatballs" with tomato sauce


Step One: "Meatballs"
2 c soaked walnuts
2 c portabella or babybella mushrooms marinated in Bragg's, olive oil and garlic for 1 hour
put nuts and mushrooms in a food processor and add parsley, crushed red pepper, thyme, oregano, garlic and salt to taste.
add olive oil if you need to bring it to the right consistancy to roll into balls.
roll into 1 inch balls and place on dehydrator trays. dehydrate for 4-6 hours.
Step Two: Marinara Sauce
1/2 c sundried tomato's soaked for 2 hours
2 tomatos, diced
1/8 c chopped green olives
put into food processor and add oregano, garlic, salt, and olive oil to taste.

candida...

i always known i have candida. my grandma, mom and dad have issues with it too. i even have a theory that my "fibromyalgia" is AKA candida or candida of the muscles.
anyway, it has ebbed and flowed throughout my life. when i have gone VEGAN, within the first few weeks i always get an awful cold.
this time around, going RAW VEGAN, i was fine! i felt better, immediately! BUT, when i have added a few cooked items here and there...guess what?
i feel, weak, get headaches, get fatigued, break out...and NOW....a bladder infection.
i am convinced it is the candida. i feel i should be completely raw for a few weeks to get this straightened out.

Nutritional Yeast

I was abit leary of using this. I didn't want to intentionally ingest YEAST! didn't sound so great!
WIKIPEDIA explains that it is a deactivated yeast high in vitamen b's. we like that!
it also has a cheesy, nutty, creamy flavor and texture.
so far, i have tried it on popcorn and tofu and also my RAWKIN RAW "popcorn".
it is good stuff!

RAWKIN RAW "popcorn"


Take a head of cauliflower and chop it up into bite size pieces.
Put into a ziplock bag and add nutritional yeast, salt, seasonings to taste.
wallah!
a yummee, quick snack!
you CAN put it into the dehydrator if you want the crunch but keep in mind that it will shrink up to about 1/3 of it's size.

in a bind....

so, last night i was starving! and in that bind i made "pasta"!!!
i did some zucchini in a spiral cutter, and added some pesto!
WALLAH!
PESTO was easy!
2 c chopped basil
1/2 c shelled pistachios
1/2 c + 2 T olive oil
1 clove garlic
1 t salt
pepper

BLEND!!!

yummee!

"popcorn"

i know! i know! everybody knows this but me! but nutritional yeast is like "cheese:!!!
you can put it on popcorn, in tofu...blah, blah, blah!
i just found a recipe for RAW POPCORN!!!
chop up some cauliflower, add nutritional yeast, herbs, seasonongs and salt to taste...and wallah! popcorn!
you can eat it "as is" or dehydrate it for a crunch!
can't wait to try it!

RAWKIN RAW brownies


This is my own recipe. I made it up, so each time it is a little different. I will give you the basic recipe but keep in mind you can alter, add, omit etc. If you find a yummy variation, let me know!

Step One: The Crust
1 to 1 1/2 c almonds
1/4 c sunflower seeds
1/2 c walnuts
1/4 t0 1/2 c agave
Grind all of the nuts until they resemble crushed graham crackers. In a bowl combine nuts and agave until it can be pressed into the bottem of a pie plate. Chill while you prepare the filling.

Step Two: Filling
3/4 c almond butter
1/4 c cocoa powder
1/2 c coconut
1/4 c goji berries
1/8 c sesame seeds
1/4 c almonds, chopped
1/2 c agave
Combine all ingredients in a food processor. The consistancy will be pasty. Press filling into crust, top with shaved coconut and chill until firm.
(again, you can add or omit as you see needed. since i do not have exact measurements, use your own skills to bring it to the right consistancy.)

ahhhh!

it is such a peaceful, content feeling to NOT think...WHY did i eat that, i feel awful!
michael keeps asking me...wanna get pizza? wanna get a patty melt...mmmmm, yum!
NO! that is my answer. NO! it may taste yummy but i am tired of feeling like CRAP afterward!
