RAWKIN RAW "lasagne"
Step One: Ricotta
2 c raw pine nuts
2 T lemon juice
2 T nutritional yeast
1 t salt
6 T water
Place everything but the water in a blender and pulse. Slowly add water until you have ricotta consistancy.
Step Two: Tomato Sauce
2 c sundried tomatoes
1 small tomato, diced
1/2 small onion
2 T olive oil
1 T agave
2 t salt
pinch of hot pepper flakes
Blend all ingredients until smooth.
Step Three: Pesto
2 c packed basil
1/2 c pistachios
1/2 c plus 2 T olive oil
1 clove garlic
1 t salt
pepper
Blend all ingredients
Step Three: Lasagne
4-5 large tomatoes thinly sliced
3-4 medium zucchini thinly sliced
2-3 shitake mushrooms thinly sliced
2 T olive oil
1 T oregano
salt and pepper
Layer in a baking dish...tomato, olive oil, mushroom, tomato sauce, zucchini, pesto, repeat...
Let stand on counter for a few hours before serving or put in refridgerator over night.
MY NOTES: this recipe ROCKS! It is sooooo delicious and you really don't miss that there is no pasta in it. 5 stars!
